This Mexican coffee is a perfect "every day" coffee that offers familiar flavors that appeal to a wide range of coffee enjoyers. Cocoa bitterness plays off notes of raw sugar, and accents of apple and spice create a warm, comfortable cup.

Roasters Notes: 

This coffee from the Chiapas region of Mexico makes an excellent medium roast. I let this coffee continue to caramelize past first crack for sweetness development but is dropped before bitter notes come through.   -Grant
